分子式简称GML） 月桂酸单甘油酯由月桂酸和甘油直接酯化合成，外观一般为鳞片状或油状、白色或浅黄色的细粒状结晶。它既是优良的乳化剂，又是安全高效广谱的抗菌剂，且不受pH限制，在中性或微碱性条件下，仍有较好的抗菌效果，缺点是不溶于水，限制了其应用。
