性状:无色至白色有光泽结晶或结晶性粉末,无臭,在空气中稳定,密度1.803g/cm3,熔点190度,易溶于水,微溶于乙醇,加热至190度变为偏磷酸铵。
作用:缓冲剂,面团调节剂,膨松剂,酵母食料,酿造发酵助剂;用于焙烤食品,发酵粉,冷冻甜食,人造奶油,发泡顶端料等。
限量:GB 2760-96,肉制品1g/kg。
